INFUSED VODKA DEMYSTIFIED

About eleven years ago I developed an allergic reaction for wine. Unfortunately I was not able to figure out what kind of wine gives it to me, it could be red, it could be white, could be expansive, could be not so, could be from the big distributor, could be from the small winery. So, I decided it would be safer just not to drink it. I can't say I follow this to the dot, but I am trying.

Fortunately it turned out I do not have any reaction to the stronger liqueurs. I like whiskey, cognac, can't imagine night on the ocean without good rum, but all of them can't really substitute wine. So because of this, and because of curiosity we started to infuse vodka. It turned out to be pretty easy and satisfying process with unlimited possibilities.


After we experimented with lots of different proportions, we found a golden rule:

if you are going to infuse vodka with fruits or berries.
lL vodka (you do not need Absolute for this, but you allow do not need the cheapest one, Smirnoff will do just fine) mix with 1.5 cup of crushed fruits or berries. Put the mixture in a plastic bottle from soft drink and store it in a cool dark place for a month. After a month add 0.5 or 1.5 Cup of sugar and mix/shake/wait till sugar dissolves. Strain and enjoy chilled. 
My favorites are: cranberry, black current, pineapple. But the limit is your imagination!

Red pepper vodka. Pertzovka (Ukrainian variety). 
1.5 cup of vodka and 5 red chilly peppers (do not cut). Wait for 2 months. Vodka will turn to gold in color and peppers will become yellow. You can throw the peppers out or keep them in. Very hot. Home remedy for cold and it works if you can manage 250mlg of it undiluted.

If you are infusing vodka with tangerines, oranges, limes, lemons, etc. 
first cut of zest and save it. Then remove the white part and discard, if left it will make vodka bitter. Chop but not smash the flesh of fruits. Add fruits and zest to vodka. Store and sweet it as any other fruit kind

Chanterelle vodka. Wonderful soft semi-apricot taste and golden color. 
750mlg vodka, 5-6 chanterelles. Put the mushroom in a bottle. They will sink. Store in a cool, dry place. As soon as chanterelles float to the surface  - infused vodka is ready.
