OUR BEST SCONES

And while I am here...


These

SCONES

became our best sellers in just two weeks. Actually, I was told by my baristas there are customers who come specifically for our scones. As one of them said: "It is the best combination of American and British scone. And I can't agree more: they are soft and flaky as you want your English scone to be plus have nice mix-ins and a beautiful crumbly crust as an excellent American scone.

The recipe is my personal invention and I would love to share. One thing I am asking in return, pls, do not copy the recipe, post a link, please.

Ingredients
14oz of vegetable margarine frozen and cut into 1oz pieces (you can substitute it with butter, but it will be a slight change in texture)
3.5 cup of unbleached flour
1tsp of baking soda
1 Tbs of sugar for sweet scones
or
1 tsp of salt for savory scones
or
nothing for plain
1 cup of cold buttermilk
2 egg yolks

Recipe
Put the flour and baking soda in a bowl of food processor and run for a minute.
One by one add margarine pieces with motor running. After all of them added you should have something like this.
 
Dump the crambs into the big bowl and add the additions, mix with spatula.
Add buttermilk all at once and again mix with the spatula. If you want to add flavorings - add them to the buttermilk. Now your dough should look like this.

Dump it all on the table with just a little flour.
Dust your hands with some flour and form a log.

Brush the log with egg yolks but be careful not to get it on the sides (just on the top).
Slice the log into individual scones (I get 10 out of this amount) with wide clean knife. Transfer to the baking sheet.
Cover with topping and bake in a preheated oven (400F) for 12-15 minutes. Let them cool a little and enjoy).

Additions
For this amount of dough you want to add 1 handful of extras and 1tsp of flavorings, 1tsp of dry spices. Some of combinations you may want to try:
Frozen blueberries (use them while frozen), vanilla, top with raw sugar.
Granny Smith apples, raisins, pumpkin pie spice, top with pecans.
Cooked and cut bacon, cheese, top with flax seeds.
Just plain with jam and butter on the side.
Fresh pears, cardamon, top with streusel.
Sundryed tomatoes, fresh basil, mozzarella.

Possibilities are endless.
